Aux Lyonnais is on of the classics in the bistro business. Simple and well prepared food from the very stomach of France, served in the charming, yet correct, surroundings of the traditional restaurant in the central part of the 2nd. The high ceilings and the hearty interior helps create the sense of history that is the place. The servants are classical French, with all the classical pros and cons that follow... In the internal jargon they'd emphasise the rigor. Although a bit pricy for the level of sophistication, Aux Lyonnais does what it does very well, and just by the book. Un bistro classique.
